Foodie Tuesday: Lemon Chicken without Cats

A friend of ours once told us about the Chinese restaurant in the small southern town where he grew up that was renowned for its trademark Lemon Chicken–until, that is, the owner was questioned about the disappearance of many of the neighborhood’s pet cats on a timetable that coincided a little too closely for comfort with the preparation and the offering of said dish on the menu.

I prefer to offer a more strictly bird-based version of the dish when I get hungry for lemon chicken. Call me old-fashioned.

I kept it very simple too, though. I’m rarely interested in making things terribly complicated in the kitchen; that’s above my pay grade. My one innovation particular to this occasion was to test a new kind of gluten-free pasta and put together a dish that could sit around in the oven for an indeterminate period without dying, since our dinner guest wasn’t sure how quickly she could get to our house from Dallas that evening. Worked out pretty nicely, as it turned out, and was both lemony and quite acceptably chicken flavored, as planned.photoLemon Chicken Linguine

Layer into a covered four- or five-quart nonstick pan in order: 1 package of RP’s fresh GF linguine (9 oz)–uncooked, straight out of the package; 2 cups of roasted, poached or braised chicken cut into 1 inch pieces (I used chicken left from one I’d oven-braised a day or two before in butter with homemade lemon seasoning (oven-dried lemon peels finely ground with Tellicherry peppercorns and Kosher salt); 1/4 cup of grated Parmesan cheese; the juice and zest of one lemon; about 1/4 cup of heavy cream. Season with ground mace, ground coriander and [the aforementioned] lemon seasoning to taste. Cover the pan snugly with its lid and set it in a low oven (not above 225°F/107°C) until the liquid is absorbed or the guests arrive, or both.

Side dishes for such an uncomplicated meal should also be uncomplicated. Good old, ubiquitous in our household, coleslaw, with apples complementing the ginger. Green beans Amandine, done up Southern style by throwing a handful of crisped bacon on top. Dessert? Why, of course. I (conveniently) had some of my strawberry-mandarin granita right in the freezer and, by golly, found some rather nice fresh strawberries and lovely sweet mandarin oranges at the grocery store as well, so I macerated a dish of those two mixed together in vanilla sugar; spooned over the granita and accompanied by some little nut and cocoa truffles I’d also made and stashed earlier.photoAlong with these foods, of course, there needed to be good drinks aplenty. Nice for wetting the whistle. But remember, one should always show appropriate restraint with the drinking or one might not know the difference if someone tries to serve a less savory sort of ‘lemon chicken’ than mine.photo

Foodie Tuesday: Fat & Sassy

In my unapologetically piggy way, I almost always manage to get a goodly amount of delicious fat into whatever food I’m fixing for any occasion. Yes, I do have the proverbial sweet tooth and oh boy do I crave my salt, and surely you’ve noticed that I rarely turn down practically any sort of food on offer at all. But there are some sneaky little biases that tend to recur so regularly that they might be considered trademarks of my taste no matter what dish or meal or bite is the treat of the moment, and tasty fat is one of those delights.

Doesn’t matter what’s the course of the meal or of the day, either one–fat is where it’s at.

Say, for a starter bite. Just putting some nice fatty dry salami together with pieces of dried apricots and chunks of dense, also fabulously fat, fried cheese makes an amazingly great treat that you might not even have to be as big an admirer of fat as I am to enjoy it all.photo

If that’s not fat enough for you (or if, like me, it’s simply not too much and therefore arguably not nearly enough), you can go about pumping up the main dish with some additional lipid-licious treasures. How about a sandwich with a nice thick slab of mozzarella or other mild, thick cheese and a whack of crispy bacon, glued together with a slathering of ginger jam and cradled between two slices of nut-butter based batter bread? All good, I assure you. Probably needed some good greasy chips to go with it, but the sandwich was perfectly serviceable on its own. Enough so that I’ll bet I could have enjoyed it with fruit or vegetables or some other ridiculously healthful and low-fat sides just the same.photo

That’d probably be an even better excuse to have a nice fat slice of sleekly fat dessert, no? Perhaps something like almond cream tart with chocolate sauce. Honestly, not a terrible way to alleviate the shortcomings of a meal that didn’t already have only strictly, gloriously fat ingredients beforehand. I like to keep my arteries well lubricated so my blood will flow nice and smoothly, you know.

Almond Cream Tart (an approximation of a recipe)

1/2 pound melted butter

1-1/3 cups sugar

4 large eggs

1-1/2 teaspoons vanilla extract

1-1/2 teaspoons water

1/2 teaspoon salt

1/2 teaspoon baking soda

1/2 teaspoon freshly ground cardamom

1-1/2 cups almond flour

Blend together thoroughly and divide the batter between two small, greased loaf pans and bake at 300 degrees until ‘sticky-finished’–very slightly underdone, or able to release a test toothpick fairly clean when it’s used to pierce the center of the loaf. Get the cakes out of the pans and let them cool enough to handle. While they’re cooling, line a Springform pan with plastic wrap.

Tear the cakes into large chunks. Distribute the cake pieces evenly in the Springform pan and press them down slightly. Moisten the cake with enough (1/4-1/2 cup of) heavy cream to help hold all of the pieces together. Smooth it out a little and sprinkle 1/2 cup sliced toasted almonds over the top of it. Press the almonds down, pull the plastic wrap over the top, and seal the tart into the pan. Then, into the fridge with it for a few hours or overnight, and when it’s well chilled it’s ready to glaze and serve.

To serve, plate up pretty pie wedges of tart for each diner. Microwave some more heavy cream (1/2 cup or so) together with some pieces of nice dark chocolate (I used Dove Promises) until you can stir them together into a nice smooth chocolate sauce and drizzle it over the top of the slices and take them all out to the table. Everybody stick your forks in and start making silly slurpy sounds. And don’t forget to wipe the luscious fatty residue off of chins, y’all. I may be greasing the skids to perdition, but isn’t it a lovely slide to take?photo

Foodie Tuesday: Un-, Ex-, De-, Out-

We are leaving one season and entering another. Time to divest ourselves of pretense and the impulse to be over-elaborate when making a change. I see people all around me worrying that their Thanksgiving menu isn’t finalized, their Fall-themed altar of mantel decor not as impressive as the next neighbor’s, and their Halloween costumes not thrilling and polished enough to accompany their hundred handmade sweets for the twenty-seven tiny Monsters who will come knocking. Better, sometimes, to enjoy simpler approaches and simpler pleasures! Autumn can be:

Uncomplicated.

Extricated from fussiness.

Demystified.

Outrageously edible.

photoAt the change of each season I do have a tendency to shift in my flavor preferences. When it’s been summer-hot out and finally becomes cool, those warming, earthy, old-fashioned and evocative spices and scents of Fall–cinnamon and cardamom, roasted roots and mushrooms, sweetly freckled pears and chalky-skinned, slightly scabby McIntosh apples (not the electronic kind, mind you) begin their annual siren songs of woodsy, sit-by-the-hearth allure. And I can go a little crazy.

It’s easy to go a bit wild, to be the over-swung pendulum flying to opposite extremes, when one has been long immured in the cooling pools of summer’s lovely seasonal foods and beginning to long for something different. But of course delicious flavors needn’t be exaggerated to be glorious. Sometimes the over-the-top approach is indeed precisely what I desire, since I’m a more-is-more kind of person in general, but sometimes a little subtlety is also a welcome thing. A restrained hand in the kitchen can allow a smaller assortment of lovely notes to interplay beautifully, and the pleasure of savoring one gorgeous individual taste at a time, too, can provide moments of sublime happiness that stretch well beyond the culinary.

I know this stuff perfectly well in my head, but my heart frequently scarpers off with my stomach quick as the dish with the proverbial spoon, and once again I have to calm myself and remember that there’s plenty of time in the season for me to slow down and savor the flavors before the next change arrives. It happened again last week, and I had a narrow escape from the annual autumnal overkill. I pressed aside my rabid plans for the sort of dangerously delirious feast that would’ve kept me comatose right up until the next fit of wildness did hit me at Thanksgiving. Fanning myself thoughtfully with a big spatula, I got busy making a much less complicated, sautéed and simmered, soup treat and found it as satisfying as could be.photo

Hearty Cauliflower & Mushroom Soup

Simmer 1 bunch of fresh sage leaves in 1/2 lb of pastured butter (I use salted–I’m very fond of my salt, thankyouverymuch) until the butter’s golden brown and fully infused with the herb and the leaves have given up their moisture. Strain out the leaves onto paper and let them crisp up nicely, giving them an additional sprinkle of salt if desired for crunch. Sauté 2 cups cauliflower florets and 1-1/2 cups sliced brown mushrooms (both can be fresh or frozen) in plenty of the sage butter until they’re soft and caramelized. Add a little liquid–water, dry sherry, broth, buttermilk or cream as you blend it all with a stick blender. No need to get it thin or even quite smooth: this is a rustic Fall soup, after all. Garnish it as you wish: a swirl of buttermilk or Crème fraîche, some crumbled crispy bacon, some deeply caramelized onions, or just a generous toss of those crisped sage leaves.

There’s only a little bit left to complete this recipe: take your bowl of prepared soup, curl yourself in the arms of a big, well-worn overstuffed chair, bundle up in that wonderful old afghan lap-rug your granny crocheted for you in your youth, crack open a musty classic book, and lap up your thick soup with a big, deep spoon. Sigh, turn page, sip, repeat. Winter’s just a few chapters away.photo

Foodie Tuesday: *Arroz* by Any Other Name

It is conceivable that by now you have figured out that I am mightily fond of Mexican, Tex-Mex, Mexican American and Mexican influenced foods and flavors. Having grown up in rich farm country where the migrant workers not only settled eventually but brought a veritable second-town of family and friends to join them over time, I was blessed to be fed by a number of eateries in our area run by the fantastic chefs all trained by one little lady in their hometown. By rights, she should have a whole county in Western Washington named after her at the very least, though I might suggest a shrine as more appropriate, because thanks to her a whole lot of us have faithfully eaten exceedingly well on both roots food from her teachings and wonderful inventions and innovations based on them.

Having moved to Texas might even be considered a logical next culinary or at least dietary step in my lifelong love of La Cocina Mexicana.

In any event, I will keep today’s post simple but say that once again I was influenced by that saintly lady’s culinary offspring when I entered the kitchen to begin dinner prep. I had intended to make something with the big gulf shrimp I had tucked into the freezer, but until it was really dinnertime I wasn’t sure but that I’d repeat the recent quick, hot-weather meal of the previous week, where I simply poached the cleaned shrimp and served them as part of a sort of deconstructed Louis or Cobb salad cousin.photo

Which would’ve been fine.

But, you know, I opened the refrigerator and saw a carton of leftover broth-cooked rice and suddenly I got all faint and dreamy-eyed and (cue theremin music and wavy-screen fantasizing-fade here) thought with longing of one of Our Lady of Mexico‘s disciples’ lovely Arroz con Camarones–that beloved combination of rice and shrimp favored by all of the Latin coastal cultures–this one a favorite version I miss from back in Tacoma.

So this day’s shrimp were coarsely chopped and kept on hand with a finely-slivered slice of leftover ham (to add some bacon-y goodness, and to help clear out the fridge) while I sautéed about a scant cup each of julienned carrots, sliced celery and chunky-cut mushrooms in some flavorful bacon fat just until crisp-tender with a little black pepper and some cumin, added the freshly squeezed juice of one big orange and about a cup of slightly drained crushed tomatoes (I used Muir Glen‘s fire-roasted tomatoes, since I like the flavor spike they add) and cooked the vegetables and sauce until slightly thickened, adding the prepared shrimp and ham just long enough to lightly cook the shrimp through. Served over the warmed rice, and with a dollop of whole yogurt to stand in for the absent crema, it was almost as good as I remembered.photo

I did have to add the hovering Abuelita in imagination to complete the effect.

Foodie Tuesday: Getting a Menu Transplant

Sticking to my ribs, yes, but maybe with the barbecue sauce twisted into a (Southern) peach chutney style to suit the Basmati rice alongside . . .

It’s not what it used to be, moving to a different place. The world is so much smaller than it once was! We talk via computer and cell phone as though we were sitting right next to each other–and sometimes when we’re sitting next to each other. Language and culture and history are all getting a good mash-up in this shrinking world where we live.

One genuinely wonderful aspect of this not-entirely-perfect scenario of homogenization is that we have access to so much that was once unreachable to everyone but the most extremely far-flung intrepid explorers and have commonalities that our ancestors could never have dreamed remotely possible. Not least of all, we can indulge in the joys of cuisines and ingredients from places we can’t even pronounce, let alone afford to visit.

Most of these regional, national, racial, cultural treasures, by virtue of being intermingled with and sampled by so many others to such a degree that sometimes it seems something learned from the Chinese by the Dutch traders and then passed along to their colonial outposts in the south seas, who in turn brought it along when they immigrated to North America, well, these ideas and arts and recipes have been so transformed along the way that they, like the initial message in the old game of Telephone, are utterly new inventions by the time the Chinese ever experience them again. And yet, in a happy twist, we who create and share the first iteration often fall in love with it and repeat and refine it until it becomes part of who we are, so it’s not wholly lost in the translation, either.

For someone who grew up in one part of the vast American patchwork of a country and experienced East Coast specialties, Southern cooking, Midwest traditions, and Southwest cuisine as being no less foreign in their ways to my Northwestern experience and palate, it’s always been a pleasurable study to try out the fabled deliciousness of Other Places. So while I’ve long loved Chinese and Dutch and Polynesian and Italian and German and Thai and Indian and North African foods of various kinds, it’s no less exotic and thrilling and delicious to sample the comestible culture of different regions of my own homeland.

Still, it’s been an entertaining and tasty part of the adventure of moving from Washington state to Texas that I’m experiencing Tex-Mex and Southern and cowboy cuisines in places of their origins and that’s mighty rich learning and dining, too. So I’m more than happy to indulge in all of those special items here anytime I can. But you know me, y’all: rarely do I go into the kitchen without bringing my own machinations and deviations to the party, so I am more than likely to emerge bearing platters and bowls filled not only with classic Texan foods but also with Texan foods as filtered through Washingtonian hands, perhaps with a hint of Chinese cookery here, Dutch baking there, Polynesia and Italy and Germany and Thailand and India and North Africa and all of my other palatable favorites making inroads and appearances whenever I see fit.

Foodie Tuesday: Even a Classic can Take Plenty of Twists and Turns

Being a fairly dedicated eater and happy to grab my utensils in the blink of an eye almost without regard to what’s on offer, I still do enjoy the familiar and comfortable on my menu too. There are occasions when I just plain crave the known and cozy to fill my plate and my empty stomach. Sometimes nothing will do but the good old-fashioned classic.photoSo when I’ve made a batch of roasted vegetables that I can pop onto the platter at a number of meals in the next few days, it can be nice to tuck it alongside a variety of things while it lasts, just to keep things interesting. However, having some of those many different entrees be lovely old-school stuff doesn’t in any way diminish the range and color of what I’m going to eat. That just makes it doubly fun to puzzle together the menus that, despite a repeating item and a well-known dish, still easily keep their sense of invention and surprise enough to brighten up both the day and the meal.

One obvious way to accomplish that is to introduce minor tweaks: ingredient combination, presentation, and so forth. The simple roast beef from last week gets thoroughly sliced and diced and then piled into buttery grilled french rolls, and finally, dipped in a dense jus reduction of roast drippings, butter and a big slosh of red wine, and served with a touch of horseradish cream (softened with sour cream) alongside side for enhancing either the beef dip sandwich or the roasted vegetables on the way down the hatch.photoA different day, a different tweaked standard: macaroni salad with bacon and eggs. Not sure I’d recommend one of this latest round of tweaks–I tried it with rice pasta (the gluten-free twist on the occasion), which was just dandy when the salad was first made, but in the refrigerated leftover salad soaked up the dressing so thoroughly that the pasta tasted pretty much just like cold rice later. It wasn’t hopeless: I added more dressing each time I went back to it, and I found that it rehydrated decently. But it wasn’t as stable in that aspect as traditional pasta, which I think I’ll still prefer in the long term. The other slight variations, however, I enjoyed very much, and by the way, so did all the others at dinner.photoMacaroni Salad with Bacon and Eggs

Cooked [elbow macaroni--still my favorite for macaroni salad] pasta gets dressed simply with mayonnaise, a good squirt of cartoon-yellow mustard, and cream. A sturdy grind of black pepper gives it a hint of depth, though it’d be great with a splash of hot sauce or a sprinkling of cayenne as well. A big handful of diced pickles playfully zings things up a little; I used half dill pickles and half sweet gherkins. You know me and my sweet-plus-salty fetish. Traditionalists would of course hard boil egg and mince or sieve it before adding it to a picnic salad. Me, I just semi-scrambled the egg until it was just fully set and minced it up. Pretty much the same result, with less time and effort. Lastly, fried up a whole lot of bacon into crispy, smoky pieces.

The end product? About like what you’d expect if waiters carrying platters of the familiar summer macaroni salad and of pasta Carbonara crashed into each other and fell into a breakfast buffet table. But involving a lot less flying cutlery and cussing. Unless you count people diving after the salad avidly waving their forks and yelling, Damn, that’s good! Not that anyone at my table would ever behave in such a reckless and uncouth manner. Well, me, maybe.

Foodie Tuesday: Pilgrimages

photoSince I have made it clear that I spend much of my travel time and energy on eating and/or thinking about eating (just as I do at home, but more exotically, if you will), then the clear corollary is that I am inclined to travel toward, and for, specific foods and eateries. Returning to my home turf is clearly a time when this is bound to take on a significance and intensity of the grandest proportions. Needless to say, it would be impossible to revisit every place we love to eat in one trip, let alone a fairly brief holiday, but we are dedicated enough to the love of good food to make our best efforts in the attempt.

Spud Fish & Chips is a local landmark institution that predates even my existence by, say, half a length, and its place in my personal registry of notables was confirmed very early not only because it’s a great place to get very tasty, freshly made cod and chips for which people have long been accustomed to queue up around the block and down the street, but one of its four (I think) branches happens to be located about two doors down from where my grandparents had their apartment when I was small. The cod (or halibut or salmon or shrimp, if that’s your preference) is hot, moist and sweet and coated with a lovely, crispy golden jacket that holds the fillets neatly together whilst they are being gently paddled through a bit of sweet tartar sauce or drizzled with malt vinegar en route to their demolition. The fries are unevenly hand-cut so that one gets the meaty, mealy, potato-y big fries and the medium, slightly more greasy ones and the thin, crisp ones all together for fine textural variety.

From the first bite of cod, I was transported immediately to the days when my parents would pile us four girls into the car and head to Grandma and Grandpa’s and at some point we would essay right across the street to Alki Beach (the nicest and most popular tidal beach in Seattle), play until we were sufficiently caked with sand and maybe had had a quick stop to pay homage to the Ice Cream Cone Lady, a 3-meter mini of the Statue of Liberty that stands almost directly across from the apartment on the beach whom I so named for my obvious assumption about that strangely compelling object she lifted in her hand while she hugged what I guess I must have thought was the menu to her bronze breast. After these exertions we would inevitably get hungry for the aforementioned fish and chips, preferably followed by our own ice cream, and that was the heavenly point of the whole outing. Besides Grandma and Grandpa, of course.

photoAnother luscious luxury I crave after too long away from it is the New England style clam chowder at 42nd Street Cafe in Seaview, Washington. In our earlier married years either my husband and I had a whole lot more free time on our hands or (more likely) were willing to cram more into the available time, so we went as often as we could manage for a three- or four-day weekend on Washington’s Long Beach Peninsula. It’s quite touristy, especially in the summer high season, because of the marvelous beaches, the excellent boardwalk, the fantastic biking and walking paths that range all over the peninsula, the usual silly shops, the fairly constant wind that makes it a prime place for kite flyers, and the regularly held classic car shows. Among other enticements. Primarily, though, it’s a place to go and relish the ocean–and, yes indeedy, to eat. For a pretty small set of towns and off-season residents, the peninsula offers a goodly range of fine eating, and we have favorite places and foods to show for it.

Cheri Walker’s glorious clam chowder is one of the many reasons we’ve faithfully, if not obsessively, returned to 42nd Street for all of these years. She somehow concocted the perfect balance of ingredients for a chowder I’ve never tasted anything close to matching, to the degree that while I won’t give many clam chowders elsewhere the time of day anymore after one look at their floury glue-like consistency and paltry pieces of rubbery clam, I would happily eat Cheri’s clam chowder three meals a day when I can get it. Bacon in it. Yes, you are unsurprised that I think this a superb ingredient in a clam chowder. I am nothing if not predictable. A major attraction of her clam chowder, however, is naturally the large quantities of fresh and tender clam bits therein. Little pieces of potato, the soft crunch of celery. That sort of goodness. But what really sets it apart is the light, savory broth, with just the right juices and herbs interlaced with cream and, I suspect, a tot of sherry or cognac to give the finish such sweetness and depth. In any event, heaven.

photoAnd while we’re on the peninsula, we indulge yet another seafood craving, this at another small-group chain restaurant. Dooger’s doesn’t either sound or look particularly impressive other than being a pleasant-looking middle-of-the-road place frequented by the older set and families with lots of squirmy kids. And it is that. There are people who disdain it for its plainness or complain that it’s predictable and dull. But we two have willingly waited at the no-reservations place as long as perhaps an hour on occasion when the crowds are in town. Why? Crab legs. Dooger’s makes the very ordinary extraordinary, at times. So very worthwhile. What you see on this plate is fairly common fare, mainly: a butter and sour cream loaded baked potato, fried white bread, a little plastic cup of very very simple seafood sauce with a hint of horseradish. All well made in their simple ways, to be fair. We always start with the salad-from-a-bag salads because (a) they go through their salads so fast that it’s always fresh greenery on your plate there and (b) it’s piled up high with the sweetest little lightly briny tiny shrimp your heart could desire. A perfectly refreshing start. Followed by this comfort food pile-up of potato and toast and oooooooooh, Dungeness crab leg pieces. Already cracked open for us lazy diners, and as we generally choose them (though you can order them sautéed in garlic butter, steamed, or Cajun spiced, too), coated with the most delicate dusting of flour and deep fried in a flash to meltingly dainty little bites of sheer Northwest nirvana. Try ‘em straight up or with a squeeze of lemon.photoI limited myself to the ‘small’ serving shown here only because I decided I would also succumb to the key lime pie which, you guessed it, is presumably made from the recipe right there on the Nellie and Joe’s juice bottle, but by golly has been a popular recipe for eons for good reason. Still and all, next time: just get more fresh, delectable crab legs. Who really knows when I’ll get to eat as many of them as I want again?

Thankfully, I have in no way limited my foodly fun to these few specialties on this trip any more than I would do so at any other time. There was a scrumptious lunch of grilled Tillamook cheddar cheese sandwich also, happily, jammed with Dungeness crab at the charming diner the Beehive in Montesano, Washington (sensing a theme here, are you?) and accompanied by light, crispy onion rings, and followed by a densely packed pie of tiny wild blackberries with just enough sugar to hold them into proper pie form. There was a delectable pub supper at A Terrible Beauty (right in West Seattle) of beer battered salmon and chips. Foodie Tuesday: Pleasing Paternal Palates

photoFather’s Day 2012 arrived on a date when we were both in the same state as our respective fathers. How about that. So it was our pleasure to gather up both sets of parents and the one sibling in close enough proximity and have a meal together.

I know that you all love food, and most of you love cooking and entertaining, too–especially if it’s for loved ones. You’ve told me so on many a Tuesday, not to mention with many a blog post of your own heralding the glories of your hospitality. I appreciate these wonders more than I can express–and the insufficiency of my words to do so is still mitigated, I think, by your awareness of my good intentions when it comes to these things. But being ‘on the road’ and having no kitchen to call my own, I knew it was the better part of valor to find a good meeting place that would supply the edible, drinkable provisions and let us all sit back and do the eating and drinking unencumbered by such worries.

Since all seven of us in the party are fans of various kinds of seafood, we opted for the Father’s Day Brunch at a local waterfront eatery well known for such stuff and let it go at that. Not a bad choice. Buffets are often a dangerous no-man’s-land of dining, to be sure, but a very popular and well-attended one is virtually guaranteed not to have the infamous nastiness of those foods that crepitate tragically on the serving board until petrification or putrefaction begin to gain ascendance over them and everything gets that creepy sheen of something that may or may not have been prepared using automotive lubricants and plumbers’ tools. Father’s Day is clearly one of the Top Five when it comes to holidays associated with hauling the parental units off to an eatery, because of course even the worst cretins among us know at some level that it’s not very polite to ask Dad to cook up his own celebratory treats and not a lot of us have the time, talent or gumption to do the deed ourselves. So we were not remotely surprised to see our restaurant of choice, and all of those we passed en route to it, jammed and jiggling with crowds of hungry visitors.

The buffet was not particularly unusual or even, probably, more sumptuous than many we’ve seen or heard others describe, but it was certainly lavish enough and varied enough to keep all of us from trying very hard to converse in the noisily crowded dining space, but rather left us making cheerily knowing winks across table at each other while cramming yet another tidbit of roasted or sugary whatsis onto a fork and into our grinning mouths. The weather was far more cooperative than predicted, so we enjoyed sunny views out through the expansive windows straight across the Sound to the big city, gulls parked on the old piling remnants of the piers adjacent to us, scudding clouds that failed to reflect in the increasing chop of the water and a few water taxis and ferries cutting through the chop to zigzag from shore to shore.photoWe ate lox and blackened salmon and hot-smoked salmon, fried shrimps and steamed prawns and seafood chowder, crab legs and crab Benedicts and crab salad; fruit and greens and vegetables and pickled goods. We ate roasted potatoes and hashed and steamed and whipped; roasts of beef and lamb and pork, and sausages and bacon; pasta and bread, muffins and scones. Cakes and pancakes, crepes and rolls, desserts and cheeses and so, so much more. Bloody Marys and coffee and tea and liquid chocolate poured from a fountain over pretty much whatever you might opt to stick under the flow. Fingers included, if I judge correctly by the number of small persons hovering near said fountain. But who’s to blame them? It’s Father’s Day, after all, and without those little scarpers there would be no fathers to celebrate, eh.photo

Foodie Tuesday: Beetroot & Brassica

It is good to have a zest for one's food. That can lead to more zest for life . . .

My favorite vegetables vary just as often as all of my other preferences, but like all of them, they range most of the time from ultra-sweet to slightly edgy, making stops everywhere in between. For today’s examples, let’s head toward the two ends of that spectrum. Beets for the sweet. Brassica for the brassy.

The other day’s beets were developed enough in their sugary content that they required very little enhancement of it. So they got steamed until tender with only butter, a good dose of orange zest–because such firm traditions as that combination of orange and beets form around associations that are popular with good reason–and salt. Turns out, the beets were so very sweet that they could have done with the addition of some lemon juice as a brightener. Next time!photo

Still, a good and very simple taste treat, and speaking of brighteners, despite being dutifully punctured before cooking, the beets exploded in their steaming bowl, giving me a wonderfully vivid reminder of another thing I’ve always adored about them. Had I not had such a hankering to eat them, I’d have had to soak some fabric in them to celebrate the occasion. Beets to dye for, indeed.photo

A fine contrast to the brilliant fuchsia coloring and that mellow sweetness is to be found in any of the friendly green Brassicas. On this occasion I wasn’t necessarily looking for sharpness or boldness quite so much as a textural and color-happy change of pace, so I opted for sautéed Brussels sprouts. Slicing them fairly thinly, I sautéed them in bacon fat with chopped walnuts, thyme and alder-smoked salt. If I weren’t so lazy and well-supplied with excellent bacon fat in my fridge, I’d have fried chopped bacon and then caramelized the sprouts with that, but there you are, I am a wonderfully lazy creature. Had I had any on hand, I might also have liked to throw in a bit of crumbled Gorgonzola to melt in just slightly, but lacking that, I drizzled the saute at table with a little thin sour cream.

With the two vegetables, all that lunch required for my sense of repletion was some simple Jasmine rice cooked in my homemade broth and topped with a big spoonful of finely grated Parmigiano-Reggiano. Simple. Filling. Varied. Amen, let’s eat.photo

But since one could make a slightly fussier meal, say, by adding a nice sizzling lamb chop garnished with a relish of balsamic-caramelized onions, why not also finish with a drink. The one my sister and I sipped the other day would do nicely: muddled fresh mint and basil leaves and a shot of Limoncello, topped with a smooth quality vodka (we used Austin’s own Tito’s, a very nice sip, as opposed to the many vodkas that taste slightly reminiscent of nail varnish remover when supped plain) over ice and stirred. Light, refreshing, and a good perspective-brightener before, with, or after a meal. Or, sure, instead of one. Cheers, y’all!photo
